We have an exciting new career opportunity for an Executive Chef at Annenberg Conference Center and Betty Ford Center in Rancho Mirage, California. Job Responsibilities: Oversees all catering/chef operations at the Annenberg Conference Center, and supports culinary operations at the Betty Ford Center in this hands-on management job. Manages 2 direct reports and has oversight of 16 food service production employees. Responsible for all human resource duties including scheduling, hiring, performance management, and ongoing training of employees. Supports Conference Center catering volume of around 30-50 functions per week, with attendance from 3-300 plus people. Responsible for quality execution of all internal and external chef responsibilities as well as catering operations, including taking orders, meeting with clients, and preparing BEO’s, event set up and take down. Conducts meetings with catering clients to go over orders and event preparation. Oversees food quality Responsible to ensure the highest level of client satisfaction through exceptional execution and delivery of the catering service operation. Responsible for the Chef duties as well as reporting, invoicing, and prepared additional financial reports as needed. Ensures compliance to food safety, sanitation, and overall workplace safety standards at all levels, and account is compliant with NSF and Ecosure audit standards at all times. Ensures compliance to Sodexo operating policies and procedures and works to maintain those standards. If you have the following job skillsets, we would love to hear from you! Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
