Summary of Responsibilities:
Reporting to the Executive Chef and Executive Sous Chef, responsibilities and essential job functions include, but are not limited to, the following:


  • Consistently offer professional, engaging and proactive guest service while supporting fellow Colleagues

  • Maintain a high level of professionalism in all aspects of job performance, practice Fairmont Service Promise”s in all interactions

  • Expedite service, controlling the flow of food orders in and out of the kitchen, and ensure that all line employees are working together to cook and plate the correct dishes at the correct times. Ensure that all orders are completed on time

  • Demonstrate awareness of groups, events or activities happening in the hotel as provided in pre-shift meetings

  • Menu development; content proposals, costing, recipes, production lists, photos

  • Order food and managing inventories to maximize quality and minimize food cost

  • Integrate culinary operations with the front of the house managers

  • Motivate, lead, coach and manage all aspect of team members” performance

  • Schedule and manage staff to support production and labour cost goals

  • Participate in and apply hotel training programs, primarily Leadership 2000 and its principles

  • Maintain a clean and safe kitchen; applying all health department guidelines, educating staff in procedures and policies, reporting and following up on equipment deficiencies, taking responsibility for

  • the management of stewarding staff, demonstrating and reinforcing a work smart/work safe attitude

  • Develop and maintain close and effective working relationships with all supporting departments

  • Follow and ensure compliance with all corporate, hotel and departmental policies and procedures

  • Work to advance professional knowledge and abilities and encouraging and supporting staff to do the same

  • Participate in hotel committees

  • Perform other job related duties and projects as assigned

Qualifications:


  • Documented culinary training and certification (Red Seal certificate, Journeyman”s papers of international equivalent) is strongly preferred

  • 5 years ” general culinary experience in luxury hotel or high quality restaurant environment, such as Michelin Star rated or equivalent is strongly preferred

  • At least 1 year international experience is strongly preferred

  • Previous leadership experience is strongly preferred

  • Capable to set and maintain the highest standards of food presentation and quality

  • Proven interpersonal, communication and organisational skills

  • Proven ability to work efficiently in a demanding and fast paced environment

  • Proven ability to work cohesively as part of a team in a multi cultural, diverse environment

  • Proven ability to focus attention on guests needs, remaining calm and courteous at all times

  • Working knowledge of MS Office programmes is required

  • Strong work ethic, highly responsible, reliable and the ability to work extended hours as necessary is required

Our Expectation of our Tellers:
Tellers introduce customers to new products and services, and generate leads for other members of the sales team to close. Every teller has her/his own scorecard with goals. An excellent teller processes between 20-25 customer transactions each hour with no mistakes through patience, attention to detail, and the ability to follow procedures.

Every teller is responsible for maintaining and balancing a cash drawer. Under direct supervision, processes customer transactions within established guidelines. Identifies and makes sales referrals, recommends alternate channels, cross-sells bank services and products for Wells Fargo partners, provides excellent customer service. Duties may include safe deposit, merchant/vault, ATM processing, bonds and coupons, foreign currency and night drop.

Summary of Responsibilities:
Reporting to the Night Manager/Director, Rooms, responsibilities and essential job functions include but are not limited to the following:


  • Consistently offers professional, engaging and friendly service

  • Ensure the current day”s revenue balances are reconciled, the payments to the guest ledger are processed, and the accounts receivables are balanced

  • Prepare daily management reports as required

  • Complete the update process on the front office system per established system guidelines

  • Complete system back-ups as required

  • Balance and verify the summary of daily transactions in the hotel and ensure that the hotel”s computer systems are readied for the next day”s business

  • Balance and audit all Front Office postings and settlements

  • Verify that all departments have posted all their revenues

  • Reconcile the food and beverage point of sale system, for each outlet, to the PMS system; record and adjust entries

  • Reconcile all miscellaneous revenue sources to the PMS system

  • Assisting with managing all aspects of the department’s overnight operations when covering for Night Manager”s duties

  • Providing managerial support for Switchboard and Front Desk when covering for Night Manager”s duties

  • Supporting daily operational duties for Royal Service, Fairmont Gold and Guest Services when covering for Night Manager”s duties

  • Performing related tasks with Housekeeping, Engineering, Security and Food & Beverage when covering for Night Manager”s duties

  • Supporting Finance Department as needed when covering for Night Manager”s duties

  • Representing resort leadership team to guests and colleagues when covering for Night Manager”s duties
