Hotel Overview:

As the Executive Chef de Cuisine at Marcus Samuelson”s signature Bermuda restaurant; Marcus” and the seasonal operation of Marcus” at the Beach, your passion, strong leadership skills and commitment to high culinary service levels will ensure that guests have an outstanding dining experience in our celebrity outlets.

Summary of Responsibilities:
Reporting to Hamilton Princess & Beach Club”s Director of Food and Beverage and Executive Chef, and working in conjunction with the Marcus Samuelsson Group, the responsibilities and essential job functions include, but are not limited to, the following:
  • Consistently offer professional, engaging and proactive guest service while supporting fellow Colleagues

  • Demonstrate Fairmont core values in all interactions

  • Lead and manage the day-to-day culinary operations to ensure the highest level of service and guest satisfaction is achieved

  • Develop and prepare menus focusing on quality, creativity, presentation and satisfaction of high guest expectations

  • Contribute to the profitability of the Food & Beverage division through strategic and innovative promotional initiatives and regular assessment of the food product vs. value perceived

  • Ensure adequate cost control by utilising proper scheduling techniques, minimisation of waste, proper allocation of food products and inventory control

  • Motivate, lead, coach and manage all aspects of team members” performance towards achieving exceptional guest service and employee satisfaction results

  • Develop and implement comprehensive action plan based on results from the Annual Employee Opinion Survey.

  • Ensure safe food handling techniques are utilized by all staff engaged in food preparation, and that all staff are properly trained to safely handle all kitchen equipment

  • Ensure a clean and safe working environment, with continual emphasis on promoting employee health and safety programs

  • Develop and maintain close and effective working relationship with all supporting departments

  • Follow and ensure compliance with all corporate, hotel, departmental and safety policies and procedures

  • Perform other job related duties and projects as assigned

Qualifications:

  • Passion for great food

  • Experience leading the culinary team within a Celebrity Chef brand

  • A minimum of five years experience as Chef de Cuisine with responsibility for all aspects of the culinary restaurant operations

  • A proven track record of creativity and innovation in food preparation and guest satisfaction

  • Knowledge and understanding of purchasing, internal controls and culinary support systems

  • Proven skill in effectively leading a multi-culturally diverse culinary team

  • A proven motivator – able to manage all aspects of team members” performance towards achieving exceptional guest service and employee satisfaction results

  • Complete familiarity with HAACP standards and compliance with all food handling regulations

  • Demonstrated ability to schedule and manage staff to support both our service level commitments and labour cost goals

  • Red Seal, Certified Chef de Cuisine designation or similar qualification is strongly preferred

  • First Aid/CPR training is an asset

  • This position requires the applicant to work long hours in a demanding, fast paced environment including evenings, weekends and public holidays
